Since we're going to be stuck inside for a little while, I decided to start baking again. Banana bread is such an easy thing to make and is also a great way to use up bananas that are too ripe and you need to get rid of. This recipe also incorporates blueberries as I also had some to use up but you could replace them with anything else you fancy adding! It's also so straight forward to make, you can throw all the ingredients together, mix and you're done!
Ingredients
75g Butter
110g Caster Sugar
1 Egg
225g Plain Flour
2 Teaspoons Baking Powder
2 Teaspoons Vanilla Essence
4 Bananas
50g Blueberries
1. Preheat your oven to 180 degrees and line a loaf tin.
2. Place the butter and caster sugar in a bowl. If you have an electric whisk or mixer then use this, if not, you can still mix manually with a wooden spoon.
3. Once this is combined, add the egg and continue to mix.
4. Slowly sift in the flour and baking powder before mixing gently.
5. In a separate bowl, mash the four bananas thoroughly. Add the vanilla essence and blueberries.
6. Add the banana and blueberry mixture into and gently fold in using a wooden spoon.
7. Pour the mixture into the loaf tin and bake for 1 hour until cooked throughout and golden brown.
That's literally it! Such an easy recipe to throw together to use up bananas and other fruit that you have lying around the house. If you do give it a try, let me know!
